Chicken 3 Ways
I'm all about a recipe that can be served multiple ways and takes some of the work off my plate at the same time. Cook once, eat lots? Yes please! These 3 chicken recipes can be made with boneless, skinless chicken breasts or thighs and are all mix it and forget it crock pot goodies.
Shredded Italian Chicken is perfect on top of pasta or veggie noodles (please give me all the noodles!), turned into a melty mozzarella sandwich or sprinkled on top of a cauliflower crust. Healthy pizza, gimme!
Hawaiian BBQ Chicken will turn any dinner into a Luau. I assume. I've never been to Hawaii. We love it as a sandwich with a tangy, pineapple slaw or over rice with sautéed bell peppers.
Green Chili Chicken is a staple in our house as it can be put in ANY Mexican food, ie: tacos, enchiladas, burritos, on top of nachos... but it's also equally yummy over Spanish rice or turned into a Southwest Pizza.
We all know you can save some serious money by purchasing family packs of meat. These recipes will help you stretch your dollar and I recommend freezing in 1 pound packages (use a quart size Ziploc and freeze flat), they'll defrost faster and it'll save you fridge space.
