Heirloom Caprese Salad

There are few things in this world as good as Caprese salad. Add in heirloom tomatoes and I'm here for it all day, every day! I serve this over spring greens to add a little color and texture, it makes the perfect side to steaks or pasta and is always a beautiful addition to your table.


Ingredients

4 heirloom tomatoes in various colors

8 oz fresh mozzarella, sliced

2 TBSP cold pressed olive oil

Balsamic Glaze for drizzling

pink finishing salt

course ground black pepper

1 box spring greens


Directions

1. Wash all produce.

2. Slice tomatoes and mozzarella in even 1/2" slices.

3. Pile spring greens on a serving platter. Layer mozzarella and tomatoes in a circle on top of the greens.

4. Evenly drizzle olive oil over the top, sprinkle with salt and pepper.

5. Drizzle with balsamic glaze. Serve!


Extras

I plated these for individual servings for our recent dinner. It makes a lovely presentation. I did 1 cup of greens, 3 tomato slices and 3 mozzarella rounds per person.
