Smoked Gouda Zucchini Muffins



Fresh zucchini combine with the best cheese ever, Smoked Gouda, to create these delicious savory muffins!

3 eggs 3/4 cup canola oil 1/4 cup sour cream 1 1/2 tsp salt 3/4 cup bread flour 1 1/4 cup all purpose flour 2 tsp baking powder 1/2 tsp baking soda 2 1/4 cups shredded zucchini, drained 1 cup shredded smoked Gouda

Preheat oven to 350 degrees. Grease 2 muffin tins, or use paper liners. In a large mixing bowl combine flours, salt, baking powder and baking soda. Whisk or sift together and set aside. I use my mixer but this can be done by hand. Mix the eggs, oil and sour cream. Add the dry ingredients and mix until just combined. Add zucchini and cheese and mix well. Divide the batter evenly between the muffin cups. Bake for 15-18 minutes. Use a tooth pick to test for doneness. ENJOY!


* This recipes makes between 18-21 muffins, depending on size. I fill my muffins with the large cookie scoop by Pampered Chef.


* I really love these with soups and stews or as an afternoon snack for my kiddos.
