The Best Chicken Soup

I'm not going to lie, chicken soup has always been one of those elusive recipes for me. Nothing ever tasted right, no matter what I did. But I found the secret ingredient... Kettle & Fire Bone Broths, specifically their Turmeric Ginger recipe. Y'all it's a game changer! This is a super simple, semi-homemade soup you can put together in no time, full of fresh ingredients and immune boosting nutrients, it's perfect for a sick kiddo or a cozy night on the couch, 100% comfort food at it's best.
Ingredients
1 rotisserie chicken, deboned and chopped into bite size pieces
4 carrots, peeled and chopped
4 stalks celery, chopped
2 small or 1 medium yellow onions, chopped
2 TBSP fresh sage, chopped
1 TBSP fresh rosemary, chopped
4 sprigs thyme, leave removed
4 cloves of garlic, minced
1 16.9 oz carton Kettle & Fire Turmeric Ginger Bone Broth
1 16.9 oz carton Kettle & Fire Chicken Bone Broth
1 24 oz carton Vegetable broth (I like Trader Joes)
4 oz mini Farfalle pasta or preferred shape
1/2 cup (1 stick) unsalted butter
Salt and pepper to taste
Directions
1. Melt butter over medium heat in a large soup pot.
2. Add carrots, celery and onion to butter. Sauté for 5 minutes or until softened. Add fresh herbs and garlic, continue sautéing for 2-3 minutes.
3. Add all bone broths, vegetable broth and chicken, stir to combine and bring to a simmer.
4. Add salt and pepper to taste. Simmer for 30 minutes.
5. Add pasta and simmer until pasta is cooked through.
6. Serve with crusty bread or crackers! Yum!
Extras
1. If you prefer a broth-ier (that's totally a word!), just add more vegetable broth!
2. I really love soup with home made beer bread, check out my recipe here.
3. You do NOT have to add the pasta if you'd prefer not to, but my kiddos love a noodle!
