Candy Cookies

I love Macadamia nuts, but geez y'all, they're expensive. So when I came across these candies on the aisle at Costco, I knew these were the answer. Chopped up and put into a simple cookie recipe, these are the perfect blend of salty, sweet and crunchy. They were a hit at our Family Ranch trip and I know you are going to love them too. ingredients

  • 2 1/2 cups all purpose flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1 cup unsalted butter, at room temperature

  • 3/4 cup packed brown sugar

  • 3/4 cup granulated sugar

  • 2 eggs

  • 1 1/2 tsp vanilla

  • 2 cups chopped Milk Chocolate Salted Caramel Macadamia Nut Candy

directions

  1. Preheat oven to 325° with racks at bottom level. Prepare cookie sheets with parchment paper.

  2. Mix dry ingredients together in a medium bowl and set aside.

  3. Cream butter and sugar with your stand mixer (or hand mixer) until lighter in color. Add vanilla and mix. Add in eggs one at a time, mixing well between each.

  4. Add dry ingredients in slowly, in batches.

  5. Fold in chopped up candy.

  6. Using a large cookie scoop, place dough on prepared cookie sheets. Be sure to put a few inches between cookies as they will spread. If using large scoop, only 6 cookies will fit on each sheet.

  7. Bake for 8-10 minutes or until lightly browned. Makes 2 dozen large cookies or 4 dozen medium size cookies.

  8. Remove from oven and cool on wire racks. Enjoy!

extras

  1. Add in your favorite candy, seriously, get all crazy, it'll be awesome!

  2. Milk is always an excellent choice alongside a cookie, but my hubs really loves these with 2 fingers of bourbon neat.

  3. Using a large cookies scoop means less time in the kitchen, but a medium or small scoop will work great as well, and may make these more palatable to smaller hands.
