Chocolate Mint Chip Cookies

You guys, these are delish! Great crust, cake-like centers, not too sweet and the perfect amount of mint. It’s about to get chilly here in DFW, and that makes me want to bake!

ingredients

  • 2 cups flour

  • 1/2 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup (2 sticks) butter

  • 2/3 cup granulated sugar

  • 2/3 cup brown sugar, packed

  • 1 tsp vanilla extract

  • 3 large eggs

  • 1 package Nestle Winter Dark Chocolate & Mint Morsels

Directions

  1. Preheat oven to 325°

  2. Whisk or sift together flour, cocoa powder, baking soda and salt in a medium bowl. Set aside.

  3. Beat butter, granulated sugar, brown sugar and vanilla together until creamy.

  4. Add eggs one at a time, beating well after each addition.

  5. Gradually beat in flour until all is incorporated.

  6. Stir in chocolate mint chips.

  7. Using medium size cookie scoop or 2 spoons, drop in rounded balls onto a prepared cookie sheet.

  8. Bake for 11-13 minutes, or until cookies are puffed and set in the center.

  9. Allow to cool on the cookie sheet for 2 minutes and transfer to a wire cooling rack to cool completely.

  1. Can't find the winter morsels by Nestle? No worries! You can use these Andes Creme de Menthe Chocolate Baking Chips!

  2. Do you use silicone baking mats? I'm new to them and they are my new favorite! Clean up is a breeze and no sticking. Grab these!

  3. If you'd prefer a less chocolatey cookie, leave out the Cocoa Powder and add in 1/2 cup more flour.
